I told you it was going to be a leftover day and it has been! The only thing I added to our dinner tonight is some roasted garlic.
Recently we went to a restaurant called Garlic in Killington, Vermont and at the table they bring you a loaf of bread and a roasted garlic. We mashed the garlic and added a little balsamic vinegar (I was doubtful) and it was quite good. We're wanted to recreate that tonight.
I figure as long as we both eat garlic it's all good!
My technique:
Preheat the oven to 400 degrees.
Take a whole head of garlic and brush off all the outer layers of papery skin.
Chop off the top part of the garlic and place on tin foil on a cookie sheet.
Drizzle a couple of teaspoons of olive oil over the garlic.
Cook for 30 minutes.
Actually... because I'm waiting for R to get here I had it in at 400 degrees for 30 minutes and then turned the oven down to 250 to continue to slowly cook until he arrives.
